Does MCS have any built-in capability for high availability?
We’re running ours in Proxmox for virtualization, and while we could do failover in there, it takes a moment for their HA processes to kick in. If we can just run two instances that would handle HA on their own, that would be great.

To answer your question, yes the MCS does support 1:1 redundancy, you can read more about it here in the MCS User Guide.
